Cinnamon-Glazed Bananas and My New Favorite Cookbook

It’s always the same old story. These people in my house? These kids, and even my husband? Every day they want to be fed. Even more than that, they want three meals per day, and a snack! It’s pretty exhausting coming up with all those food ideas, isn’t it? And when I do cook, I want it to be easy, yummy, and healthy. I want it to be something my family will eat without complaint. That’s not too much to ask, is it?

Well, this past summer I had an amazing opportunity. One of my favorite bloggers, Lisa Leake of 100 Days of Real Food, was working on a new cookbook, and she needed recipe testers. I was lucky enough to be one of those testers, which gave me a glimpse of how wonderful this new cookbook is. I now have an awesome new solution to the age old “What’s for dinner?” problem!

Lisa always has so many amazing school lunch ideas. Her recipe for veggie cream cheese really dresses up these cute little sandwiches. Forget school lunch, this might even be my lunch at work!

I love fish tacos, so I can’t wait to try out Lisa’s version. In fact, these may be on the menu as soon as next week! I love that so many of her recipes are quick enough for weeknight meals, because that’s just what my busy family needs.

Another recipe to try soon is this yummy Asian rice noodle salad. In fact, we may have to try this one before the fish tacos. It’s going to be hard to choose, they both look so yummy!

Cinnamon-Glazed Bananas

This dessert is similar to Bananas Foster. It’s fabulous by itself and even better over vanilla ice cream. Such a tasty real-food treat!

Ingredients
  • 2 tablespoons butter
  • ¼ cup pure maple syrup
  • ½ teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 4 large bananas, cut into ½-inch-thick slices
  • Vanilla ice cream (optional), for serving
Instructions
  1. In a skillet, combine the butter, maple syrup, cinnamon, and vanilla and set over medium heat. When it starts bubbling, add the bananas and cook for 30 to 60 seconds, stirring to coat. Serve as is or over vanilla ice cream.
